Kombu - Laminaria Digitata is a brown seaweed common around our shores, best picked when young and olive green in colour.
Kombu is associated with cooking beans and lentils and is said to be beneficial in the cooking process.
Kombu is very high in Iodine, each gram contains many times the daily nutrition reference value.
We recommend that kombu is removed from dishes before serving.
Our Wild Irish Kombu is supplied an compostable 50g cellulose bags.
Excess consumption may have adverse effects.

The kombu is then removed after cooking. It is said to help improve the cooking qualities, it imparts a little flavour to the dish and also minerals including Iodine.
